I can’t emphasize enough how much we adore couscous, and the kids love it too. The preparation is extremely simple, and couscous is incredibly versatile and delicious. This Mediterranean Couscous Salad makes a lovely side dish for various meat, fish, or vegetarian main courses. The couscous itself has a mild flavor, allowing us to experiment with different spices and vegetables. Our favorite approach is the Mediterranean route, which includes colorful fresh vegetables, sesame paste, and lemon. You can serve this salad either cold or warm.

What is couscous, and how do we prepare it?

Couscous is a delicious dish made of small rolled wheat or semolina granules. It's not a special cereal of plant, but a semolina product. It's popular in North Africa, and thanks to its gentle flavor, it can be prepared in many different ways. Store-bought couscous takes minutes, making it perfect for a quick side weeknight side dish. 

To cook the couscous, we add it to a bowl and cover it with salted boiling water to cover over a centimeter or 1/2-inch of the couscous. Cover with a plate and set aside for 5 minutes to cook. Then, fluff with a fork and add additional ingredients to your liking.

METHOD

  • dressing

    Add olive oil, lemon juice, harissa, tahini, salt, pepper, and grated chili in a small bowl. Whisk to combine, then set aside.

  • roast the peppers

    Place the peppers in a deep baking dish. Place in the preheated oven on the middle rack and roast for 20 minutes at 210 °C / 410 °F. Remove from the oven and transfer to a plate. Cover with a different plate and set aside to cool slightly.

  • couscous

    Add couscous to a bowl and cover with 300ml (1 1/4 cups) salted boiling water. Cover with a plate and set aside for the couscous to cook for approximately 5 minutes.

  • Mediterranean Couscous Salad​

    Peel the roasted peppers. Using a fork, fluff the couscous. Add the cherry tomatoes, cucumber, onion, roasted pepper, preserved lemon, chopped parsley, and olives. Drizzle with homemade salad dressing, toss to combine, and serve.
